Last weekend we had quite a lot of left-over plain bread, and I thought it would be fun to turn them into mini pizza. I just utilized ingredients that I already had at home. This mini pizza is so simple to make. It only took me about 30 minutes to prepare the sauce and toppings, and another 30 minutes to bake ( we have a small table- top oven, for bigger oven I believe it will take even less time). So, here’s the recipe:
Ingredients:
Plain bread (12 slices)
For sauce:
- 10 small tomatoes, washed and boiled until the skin gets peeled
- 150 gram minced meat
- 3 cloves garlic, finely chopped
- one yellow onion, finely chopped
- oregano
- 2 bay leaves
- salt to taste
Other toppings:
- shredded cheese (mozzarella and Parmesan combo is the best, but what I had in hand was cheddar)
- spring onion, finely chopped
- pineapple, chopped into chunks (unfortunately we could not find pineapple in the market that day)
Directions to make the sauce:
1. Boil the tomatoes until cooked and the skin gets detached from the ‘meat’
2. Pour out the hot water and soak the tomatoes in cold water
3. When it is cold enough to handle, carefully peel out the skin
4. Blend the tomatoes into smooth paste, set aside. You can use blender, food processor, or simply pestle and mortar like what I did
5. Now, heat saucepan with a drizzle of cooking oil
6. Sauté garlic and onion till fragrant
7. Add the minced meat, sauté until meat change in color
8. Add in the tomato paste, bay leaves, oregano, and salt, mix well
9. Let it simmer for about 10 minutes, or until the sauce thickens , then cool off
Now that the sauce is done, we are ready to make the pizza.
1. Preheat your oven to 200 C
2. For each slice of bread:
- Spread the homemade sauce evenly on top of it
- Top with pineapple (if any) and shredded cheese , sprinkle with spring onion
3. Bake each batch of pizza for 5-10 mins, or up to your liking.
Enjoy with extra hot chilli sauce !
